In the Yirgacheffe region of Ethiopia, the birthplace of coffee, smallholder farmers deliver their cherries to central processing stations, where they are carefully sorted and prepared for processing. At the Biri Chereka station, the coffee is processed using the washed method, with controlled fermentation and slow drying on raised African beds.
