The washing station of Danse Mormora is 6 years old and is a very well known name in the area. The people working at the washing station have a lot of experience and buy red cherries from the same families year after year.
After the hand picking the coffees are trown in water to get the floaters out. Afterwards they are put on African beds where they get turned each 1/2 hour. If the sun is too high they cover the tables and continue when the it’s less hot. After lying and drying between 18 and 22 days the dried cherries get put in plastic bags and stored on site.They go to the depulping station who is nearby town Haro Lebetu and after the cherries are depulped the coffee goes to Addis.

In the cup we discover a special aromatic profile, with notes of pears, elderberry, exotic fruits and a sweet scent.
