Euclides and Nelsy live at their farm year-round and work side by side, carrying out all the non-harvest and harvest chores themselves. They grow the Colombia and Caturra varieties, and a newish plot of Pink Bourbon will enter its first harvest very soon.
This micro lot is one of his first natural coffees. After the Caturra and Colombia cherry was picked at its peak moment of ripeness, Nelsy treated it to a flote or float, to remove any debris or under-ripe cherry.
The coffee was then put into small tanks and fermented for 80 hours. The cherry was then put out to dry on raised beds as well as on a patio for a period of 45 days. Once the coffee was finished drying, the producers carefully stored it until they could hire the adequate transport to deliver it to cooperative.
In the cup we find a floral coffee, with notes of citruses, cherries and pecans, sweetened by a muscat scent.
