Coffee production in Ethiopia is strongly influenced by the seasons, with harvesting taking place during the dry Bega season (October–January). In the Gedeb area, specifically in the village of Gotiti, coffee cherries are hand-selected and subjected to a flotation process to remove lower-quality beans. Afterwards, they are placed on raised drying beds, where they dry naturally for 12–15 days under constant supervision, and once dried, the green beans are hand-sorted. The Gotiti processing station, the largest in the region, has over 350 drying beds and employs hundreds of seasonal workers during the harvest period.
