This coffee is grown in Khun Lao village, in the Chiang Rai region of Thailand, and belongs to the Chiang Mai variety, a local hybrid known for the plant's resistance to disease. This year, Beanspire is working with Sri from the Jaipin family for the first time, with her coffee selected separately from the rest of the family's harvest to create a distinct micro-lot. After harvesting, the coffee cherries were left to ferment in sealed bags before being dried for nearly 30 days on raised beds, in a drying space built by Sri herself. She also used a dehumidifier to help control the drying process.
