The Sidama region straddles the fertile highlands of Ethiopia, where half of the land is used for agriculture. The surrounding rivers and lakes, along with the high altitudes, result in cool weather and fertile soil. These factors, combined with abundant rainfall throughout the year, cause coffee to ripen more slowly than in any other region of Ethiopia.
The coffee cherries are picked, sorted and washed to remove impurities, then delivered, usually the same day. Afterwards, they are laid out on raised beds, where they will be constantly turned during the following drying sessions. The process can take an average of 8-5 days depending on weather conditions.
