The coffee in this lot comes from about 560 small farmers in Limu woreda, Oromia region.
The coffee cherries are dehulled, usually on the same day they are picked, leaving behind the mucilage-covered parchment coffee, which then sinks into soaking and fermentation tanks.The fermentation process breaks down the sugars in the mucilage and frees it from the parchment, lasting around 24 hours. Once fermentation is complete, the coffee is released from the fermentation tank and manually pushed with running water through water channels and washed. At the end of the channels, the coffee goes into another tank where it is rinsed with fresh water, then dried in the sun on raised beds.
