This batch of coffee was produced by the Kennisa cooperative, where approximately three hundred small farmers sell their cherries.
On the day of picking, the cherries are dehulled using an eco-pulper, then the parchment coffee is placed on raised beds and turned by hand at regular intervals for even drying.
After this process, the coffee is transported to the capital Addis Ababa and, after the purchase contract is concluded, the cherries are prepared for export using modern equipment that removes the parchment from the beans and classifies and sorts the coffee by density and size.
