The processing station at Fazenda Santuario Sul spans 120 hectares, of which 80 are dedicated to coffee cultivation. Here, 30 varieties and cultivars of coffee are grown, including the traditional Ethiopian type Rume Sudan, alongside Gesha and SL-28. The heirloom varieties and high altitude contribute to the exceptional quality of the coffee produced at this farm.

After harvesting, the coffee beans are spread out to dry on patios or raised beds. The drying process can take between 20 and 25 days, depending on the weather conditions.

100% Arabica specialty coffee grown in a specific geographical zone, carefully harvested, processed, selected and freshly roasted in small batches according to it's origin and processing characteristics.
