The cherries are usually harvested and processed on the same day and sorted in a water tank: damaged cherries and impurities will float, while ripe cherries will sink. After this process, the coffee is spread out on raised beds, tables, tarpaulins or terraces and turned constantly on easers then on average 30-40 days, depending on the weather conditions.
The shades that this batch does offer are multiple, from grapefruit and peach to black tea and honey.
