The Bishan Wate processing station, located in Guji near the Wate River, works with approximately 50 local farmers. Coffee cherries are harvested only when perfectly ripe and are sent immediately for processing. Initially, the cherries are submerged in clean, cold water to separate any defective fruit. This is followed by washing and depulping, after which the coffee undergoes a 48-hour fermentation. Finally, the beans are placed on raised drying beds, carefully positioned to benefit from maximum airflow and reduced direct sunlight. The drying process takes approximately 21 days, or until the beans reach a moisture content of 12%.
