This batch of coffee originates from the Pegasing district in Takengon, Aceh, Sumatra, and is processed by a small farm led by the winner of the Cup of Excellence competition, Asman Arianto. In Sumatra, coffee farmers handpick their cherries and pulp them at the farm or at home. The beans are then dried for a short period and brought to a coffee market or collection point, where they are purchased with the mucilage still partially intact. After pulping, the coffee is dried to a moisture content of 11-13%, preparing it for export.
The wet-hulling process was developed to accelerate drying and efficiency in a high-humidity climate, characterized by heavy rains and clouds. Removing the parchment before the final drying allows the coffee to dry faster, even under these conditions.
This batch of coffee captivates with the freshness of its aromas. In the first wave, it delights us with elderflower and citrus notes, while the finishing touches remind us of ripe blackberries.
