The Kindeng Mill processing station in Papua New Guinea receives coffee from approximately 1,500 small farmers in the municipalities of Kindeng and Arufa, who cultivate it on sandy and clay soil.
Only the ripest cherries are harvested, which are then sorted by hand and placed on raised beds for approximately 3-4 weeks until completely dry. During this time, the cherries are turned by hand regularly to achieve even moisture. Once the coffee is properly dried, it is stored in a cool, dry warehouse, dehulled, and prepared for export.
The story of this batch continues in the cup where we discover a complex and fine coffee, with a spectacular aromatic profile, similar to an explosion of exotic fruits, blackberries and spices.
